**Job Purpose**
The Custodian position is accountable for providing that WOW Experience to our customers from their very first sight into the Restaurant. Taking food preparation to another level we provide to our guest a food experience to remember. Supporting the day-to-day operations of the Restaurant that includes cleaning and maintaining all areas and helping to prep our food, the Custodian ensures proper presentation of dining areas according to our Company standards. The Custodian uses Every Guest Matters mentality. This position works with a diverse group of guests as well as internal team members.
**Essential Functions**

**Responsibilities includes, but not limited to:**
Maintains a clean and organized work area
Ensures that tables are clear and clean after a guest leaves
Maintains and washes dishes and other wares per company standards
Stocks/restocks items
Receive and stores food supplies
Removes trash and clean garbage containers
Prepares and marinates all food items to order, following standard recipes and procedures within specified time limits
Properly measures and assembles ingredients required for preparing standard recipes
Cuts and/or portions food product to company standards
Uses scale to ensure proper portioning of food items
Minimizes waste of products
Accepts or rejects ingredients based on quality and quantity
Cleans, organizes, and maintains walk-in refrigerator, reach-in refrigerator, cooler drawers, prep, and dry storage area
Rinses and cuts raw food products
Refills condiments
Keep beverage area cleaned and restocked
Keep bathrooms cleaned
Keep windows, doors, sneeze guards cleaned
Refills soap and sanitizer buckets and stocks towels
**Custodian Accountability**
Understands and complies with all food safety (hand washing, cross contamination) temperature standards and uniforms. Ensures that produce is being cut and portioned to company standards
Notifies a Manager immediately if a Guest or Team Member is injured or has a complaint
Rotates product according to First in, first Out to maintain shelf-life standards
Notifies supervisor, logs, and discards all product not used by the end of the use by date
Communicates with Team Members and management throughout the shift regarding status of orders and availability of product
Participates in administrative activities that may include ordering, detail cleaning, etc.
Available to work all hours, including nights, weekends and holidays.
Contact Supervisor immediately for any R&M needs and follow all emergency safety procedures

**Working Conditions**
This job operates in a fast-paced environment with some exposure to smoke, steam, high and low temperatures and humidity. Works well under pressure and can react quickly to changes in environment or customer demand.
**Physical Requirements**
Mobility is required during the entire shift including standing on feet for a long period of time. This would require the ability to reach, bend, squat and frequently lift and move up to 50 lbs.
Must be capable of using Knives, slicing equipment, and other food preparation equipment/tools
Ability to work in a constant state of alertness and safe manner.
**Travel & Relocation**
Travel is not necessary, other than meetings or training in the greater L.A. area. Relocation to other company Restaurants may be needed on a temporary or permanent situation. No overnight stay will be required.
**Supervisor Responsibility**
This position has no supervisory responsibilities.
